I'm running Yoko Neova's on the track - 295/30R18 and 235/40R18. I don't know the exact wheel weights, but I think I am saving about 6-7lbs per wheel versus my (old) Victor Equipment track wheels. The difference I felt (and it is only based on 1 track day) is kind of hard to define, but the car feels a little livelier - quicker accelerating, stronger braking and crisper turn-in. I should add that I also changed to GT3 seats nat the same time, so between the Volks and the new seats, I have reduced the cars weight considerably, so the changes I sensed were a function of the both the seats (about 40 lbs saved) and the Volks. I'm going to be doing another 5 track days this month (Mosport and Watkins Glen) so that should give me more opportunity to really understand the difference.
