Skip Barber runs both a Racing School and High Performance Driving School at Road Atlanta. It's not cheap - about $3K for a weekend - but probably well worth it if you can afford it.

I took the Audi Driving Experience course at Road Atlanta several years ago, and thought it was worth the $$.

Also, you might want to check Roebling Road Raceway in Savannah to see if they run any schools.

And don't forget that you can also join the PCA and attend one of the many DE (Driver's Ed) events they hold in the region every year (and that way you get to drive your car on the track ).
