Nope, I wouldn't do that. Fabreze is not a leather cleaner but it will help keep your car smelling clean. I would only spray it on the carpet, and only just a little.
For the leather, do some searches on the forum. There are a lot of good products out there. I used Optimum Protectant Plus on my seats and interior just this past weekend and it worked well.

Zanio leather care products which I don't like because of the "smell" might be what you are looking for. A lot of folks here really like it because it has an odor. My gripe is only due to its lack of leather smell authenticity. But as a new car smell it might just be the ticket.
I would say just use nice smelling products, I find that the combination of smells is usually a new car smell type smell. Eg. carpet shampoo plus leather conditioner plus plastic protectant.
I've had my Cayman for almost a year now, and wanted to clean the interior pretty well. It seems like a trip to Autozone is in store to get a leather conditioner/protectant.
Do the plastic protectant all leave the shiny finish? I would prefer to not have such a "shiny" dash when it is clean.
Griots has a Leather scented interior scent product. Spray a few drops on the floor mats and the car has a nice leather smell that is similar to a new car. I use it and reccomend it. Like 10 or 12 bucks for a small spray bottle.
I use a small California Duster on the dash and plastic parts - keeps the dust off and leaves no shine at all. For leather parts I use HideFood which keeps the leather looking like new. At some local car widget emporium I picked up a small bottle of 'new car smell' and sprayed a small amount on the carpet. Next time the wife got in she remarked that it smelt 'soapy' inside. Going to try the Febreze option next and see how that works...
I used febreze auto in my last car (Cayman is still fairly new and still smells nice), and I sprayed enough to slightly dampen the carpeting. It's the same way I use all febreze products, and the instructions say that odors are eliminated as the solution dries. The car won't smell like a new car though. It will smell like febreze, which is a nice scent. That 'new car' smell is from a combination of adhesives, cleaners, and the plastic/rubber parts. Try smelling a pair of brand new pair of shoes and you'll notice a very similar scent. I don't think there really is a way to re-create the conditions that get you that new car smell unless...the car's new. You can look around and find a whole bunch of products offering that 'new car' smell, but I've never smelled one that actually made a car smell like new. Frequently they smell funky.
