Good news and bad news - Unfortunately, not from one source... I've been very fortunate to mostly find new car take offs from private individuals. Seems like the 997 guys (primarily, but certainly not exclusive of the 987 guys) like to customize with alcantara and carbon fiber bits. If you're attentive, and a little lucky, you can catch them when they come up on the flea-bay.
center console - $1 ...

and $20 shipping. This same guy also happened to have a
parking break that he hadn't listed yet. $25 more and he sent that too. This was by far my luckiest buy. I've never seen another reasonably priced parking break on Ebay, but you see the take-off consoles from time to time for $100-$150.
shifter and leather boot - these come up from time to time. should be able to get one for @25 - $50
shroud at the base of the steering wheel - didn't change this... it looks like the leather covered ones are interior colored instead of black judging by one of the comparison pics
sport chrono face is now black - didn't change this one... though a comparison pic has a black
SC face. I think the non S caymans have black gauge faces.

Fun Shifter On German Ebay This looks awesome. If you can get them to ship out of Germany... and take a form of payment that doesn't suck... and you can read German... well, you get the idea. I guess I won't bid on this one. Have at it. Did I mentiona how cool it is?
I've been on the lookout for a black steering wheel... the problem is the airbag. I'm not as keen on a take-off of one of those and the new ones are more than I want to spend to replace a perfectly good tan one. I'm keeping my eyes peeled. There are bound to be some floating out there. What with all of those solid gold GT3RS wheels that got installed...
Good luck on the leather bits dreis44. I hardly ever see any tan pieces except for shifter/boots. You'll probably have to get really lucky and spot them as soon as some salvage company lists them... not too many people voluntarily taking off the leather pieces.
