I've seen a host of threads wrt the rear shocks being a pain to access the tops of the towers. Now, without really looking myself, is there some reasonable way that somebody could decipher to take the factory internal moulding pieces and modify them so that a quick panel removal would gain access to the shock top?

The only thing close that I've seen, was a suggestion by K-Man S in one of his Articles: to replace the upper retaining screw/clip, which is the one which apparently causes the most headaches in removing the cover, with something like a Velcro sticker the first time you remove it. At least that makes it easier to remove on subsequent occasions.

My plan is when I get the coils, I'll leave the rear trims off, so I can adjust them as often and easily as I like. You don't look inside your trunk that often anyway

Adjustable damping - and as KS-CS points out, if you're in there once and it's a pain then if you can modify it to ease latter access, why not?
Don't adjustable rear shocks have the adjustment controls in a more accessible location than the top of the strut tower? On all sport coupes, you have to remove trim pieces or contort yourself through the trunk to reach the top of the rear struts. It would be a major PITA if that was the only way to adjust the dampening.
For what it's worth, I just installed KYB adjustable struts on my 240SX. You adjust the front shocks by inserting a screwdriver at the top of the shock tower - which is fine because the top of the shocks are easily accessed by opening the hood. On the rears, there's a dampening control knob at the bottom of each strut body. To access it, all you have to do is reach your hand behind the rear wheel and twist. It takes 5 seconds per side, and there's no need to remove trim pieces or even open the trunk. Here's a picture of what they look like.
