When you mention 'gear sets' are you talking about ring and pinion? Or 1st, 2nd, 3rd.....?

I think you can assume significant interest here considering people are spending thousands on mods that, on a good day, may yield 5-10 HP increases. The improvement in acceleration with better gearing would dwarf those results. The devil is in the details. So what do you have in mind?
I would certainly be interested. Changing out the rear end gear ratio was always one of the first things that I did to my Mustangs. I'd love to be able to do the same on the Cayman for a reasonable price.
~70 mph in 2nd gear is just blah....

The easiest and cheapest way to change your final drive ratio is to change your rear tires to the smallest diameter tires you can find. 285/30 or 295/30 depending on the exact tire should reduce your final drive ratio by about 5%. It's not a huge change, but you don't have to drop your engine and break open your gearbox. The Continental ContiSportContact 2 is even available in a 255/30 that reduces the final drive ratio by 9%. It's a crappy tire, though.

Changing the final drive is not the answer. That kills cruising gas mileage and makes 1st into more of a stump puller than it already is. it also does nothing to improve the spacing of the intermediate gears. I'd like to see changes to 2nd, 3rd, 4th and possibly 5th.

I agree. Plus make 6th a whacky highway cruising gear. 75-80 mph should be around 2500 rpm. Right now 60mph takes 2400.
I understand that this is a whole different conversation, though.
