We'll probably stay at the Alii but we're looking for recommendations for fine dining experiences in Maui.

For something casual, that sometimes offers interesting specials, Makawao Steak House - off the beaten path, not close to Kaanapali. I had lobster medallions in puff pastry there once. It was sublime.
I was there for lunch and had the Grilled Wild Ahi and Nueske’s Smoked Bacon Sandwich, amazing. The restaurant is right on the water with amazing views. A reservation is a must.
My wife and I also ate at Pacific O's and loved it. One suggestion is that there is a cattle ranch on the island, near a vineyard. On the ranch they have a general store which serves excellent hamburgers. I recommend taking a drive to the vineyard for a tasting, and lunch on the ranch. I don't know the name of the ranch, but I believe it is the only one on Maui. If it isn't just ask someone for the one near a vineyard. The vineyard makes pineapple champagne which was featured on Emeril's TV show.

I think you're referring to Ulupalakua Ranch, where Tedeschi Vineyards are located. That's quite a drive from Kaanapali; at least to us islanders.
BTW, I think A Pacific Cafe closed.

But if thats were you go make reservations now. Last summer, if you did not have reservations it was almost a 2-3 hour wait.
